Ingredients (Makes ~6 medium pancakes)

¾ cup Balletic Bake™
½ cup flour
1 tbsp ground flaxseed
1 tsp baking powder
½ tsp cinnamon
Pinch of salt
¾ cup milk
1 tbsp maple syrup
1 tsp vanilla extract
Optional: blueberries, chocolate chips, or sliced bananas

Instructions

  1. In a bowl, mix dry ingredients: Balletic Bake™, flour, flaxseed, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together milk, maple syrup, and vanilla.
  3. Combine wet and dry ingredients. Stir until smooth but don’t overmix. Let batter sit for 5 minutes to thicken.
  4. Heat a nonstick skillet over medium heat with a bit of oil or vegan butter.
  5. Pour ¼ cup batter per pancake. Cook until bubbles form and edges look dry (2–3 minutes), then flip and cook another 1–2 minutes.
  6. Serve warm with fresh fruit, more maple syrup, nut butter, or yogurt.
