Ingredients (Makes ~6 medium pancakes)
¾ cup Balletic Bake™
½ cup flour
1 tbsp ground flaxseed
1 tsp baking powder
½ tsp cinnamon
Pinch of salt
¾ cup milk
1 tbsp maple syrup
1 tsp vanilla extract
Optional: blueberries, chocolate chips, or sliced bananas
Instructions
- In a bowl, mix dry ingredients: Balletic Bake™, flour, flaxseed, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together milk, maple syrup, and vanilla.
- Combine wet and dry ingredients. Stir until smooth but don’t overmix. Let batter sit for 5 minutes to thicken.
- Heat a nonstick skillet over medium heat with a bit of oil or vegan butter.
- Pour ¼ cup batter per pancake. Cook until bubbles form and edges look dry (2–3 minutes), then flip and cook another 1–2 minutes.
- Serve warm with fresh fruit, more maple syrup, nut butter, or yogurt.
